Mmmmm…it smells like football season, ladies and gentlemen. The fall is my absolute favorite time of the year. Football season has begun, the leaves will start changing soon, and I have more excuses to cook food for people.
This week Virginia Tech beat the hell outta Appalachian State.
The game was hot but I definitely didn’t complain. You couldn’t even compare it to the Texas heat.
We had a fantastic time. Gah I love football.
Before and after the game we tailgated and I was requested to bring my Chex Mix. This time of year I start getting phone calls/texts/e-mails requesting the recipe so I thought what better way to give it out then to put it up here? So here goes:
Meg’s Spicy Chex Mix (Eventually I’ll publish a cookbook, but I guess this is good for now, right?)
Here’s what you’ll need:
1 stick of butter
2 Tablespoons Worsteshire sauce
1 and 1/2 teaspoons of Lawry’s Seasoned Salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon (or more if you’re feisty) cayenne pepper
4 cups corn or rice Chex cereal
3 cups wheat chex cereal
2 cups pretzel goldfish
2 cups cheddar goldfish
Preheat the oven to 325 degrees. Combine the cereal and goldfish in a large bowl (preferably one that has a top).
Melt the butter in a small bowl. Add Worsteshire sauce and seasonings. Mix thoroughly.
Once the butter is well mixed, spread evenly over the bowl of crackers and cereal.
Place the top on the bowl and shake to cover the cereal evenly. If you don’t have a top, use your hands to mix well so that the butter is evenly distributed. Then wash your hands. The butter is kind of gross feeling.
Place a sheet of foil on a 13 x 9 pan. Evenly spread the mixture on the pan and place in the oven.
Take the pan out of the oven every 15 minutes and mix with your fingers, making sure you’ve shifted the cereal from the outside to the inside.
Bake for 30-45 minutes and do not let burn! Voila!
