I got home from an amazing Savage Race weekend in Maryland (more details on the race soon) and was craving something light and fresh. Unfortunately, I’ve been out of town so much that my groceries were limited. Not to mention that my arms are so sore, I don’t think I could push a grocery cart. SO, I used what I had and here’s what I came up with:
Cilantro Lime Rice
Here’s whatcha need:
1 cup brown rice
1 cup water
1 cup chicken stock
1 tablespoon butter
1/3 cup of fresh chopped cilantro
1/2 freshly squeezed lime juice
Garlic Salt
Bring chicken stock, water, and butter to a boil. Then add rice.
Reduce heat to simmer and cover. Remember that brown rice takes longer to cook than white–should be done in about 25-30 minutes.
Once completely cooked, give a quick stir.
The bottom of my pan is scratched. Williams-Sonoma gift cards are gladly accepted to help this problem.
Add in cilantro, lime juice, and garlic salt to taste (start with 1/2 teaspoon).
Give a stir, remove from heat, and re-cover for 5 minutes.

FUN FACT: I love love love fresh herbs. I buy a ton of herbs because my apartment doesn’t have a porch for me to grow my crop. To keep my herbs fresh, I always wrap them in a damp wet towel and stick them in a Ziplock baggy.
This rice goes perfect with Tequila lime chicken, black beans, fajitas, or fish tacos. I’m hungry.
